Ingredients for Thousand Layer Cake:
– Milk 350ml
– Butterfly pea flower 10g
– Eggs 3
– Cake flour 80g
– Cornstarch 15g
– Sugar 30g
– Salt 1g
– Butter (melted) 20g
– Whipped cream 150g
– Sugar 10g
Steps for making Thousand Layer Cake:
1. Pour milk into a small saucepan, add butterfly pea flower, and heat over low heat until the edges start to boil.
2. Turn off the heat, cover, and let it steep for 5 minutes.
3. Strain the mixture, pressing the butterfly pea flower with a spatula to extract the milk. Let it cool and then add the beaten egg liquid.
4. Add the cooled butterfly pea flower milk to the beaten egg liquid.
5. Sift cake flour and cornstarch, add sugar and salt, then add milk 2 to 3 times to the butterfly pea flower milk mixture, stirring well. Pour in the melted butter and mix until uniform, then strain again.
6. Heat a non-stick pan with a little oil, turn down the heat, lift the pan, pour an appropriate amount of batter with a large spoon, immediately swirl it around the pan to coat the entire surface, and then cook for about 10 seconds. Use chopsticks to lift the edges, flip, and cook for another 10 seconds. Immediately invert onto a prepared flat dish lined with plastic wrap for easier handling. Repeat this process until all the batter is used, and arrange the cooled crepes layer by layer. Use a bowl to invert on top, trim off excess with a knife, and then you can pipe the cream. Alternate layers of crepe and cream, and decorate the surface with blueberries and dust with sugar powder.

Cooking Tips for Thousand Layer Cake:
1. Pipe thin layers of cream; use a piping bag to create lines and then spread with a small spatula to cover the entire crepe without making it too rich.
2. Trim excess crepe with a mold for a neater and more attractive finish.
3. If time allows, double the recipe for more layers and a more impressive presentation.
4. Whip the cream by beating 150g of whipped cream with 10g of sugar until it reaches 80% stiff.
