Step 1: Prepare the ingredients as specified above, weigh them using an electronic scale. If it’s your first time, be careful with the quantities. Step 2: Separate the seven eggs into yolks and whites, placing each in separate containers for later use. Step 3: In the container with egg whites, add 20g of white sugar at once and whip with an electric mixer for about 3 minutes until stiff peaks form, as shown in the image, where two toothpicks can stand upright without falling over. (This step is crucial and not recommended to do manually, as it is tiring. If you have just finished work and need to help with your child’s homework, and even have little time for a quiet face mask, please take care of yourself and save your energy.) Step 4: In the container with egg yolks, add 20g of white sugar, 60g of vegetable oil, 75g of milk, and 120g of flour, and stir until semi-fluid, as shown in the image. Step 5: Now that both containers are ready, add the whipped egg whites to the well-mixed yolk batter in three portions, stirring well after each addition, as shown in the image. Step 6: Next, take your rice cooker’s inner pot, ensuring the bottom is dry and without water, then brush a layer of oil on the bottom and slowly pour in the pale yellow batter. Give it a gentle shake to remove air bubbles. (Not shaking is also fine; I feel that shaking doesn’t have a noticeable effect.) Step 7: Place the pot in the rice cooker and press the ‘Cook’ or ‘Cake’ button (some rice cookers have this function). After about 50 minutes, the cake is ready. I had difficulty demolding, so I did it manually… The resulting cake is delicate, soft, and not overly sweet. If the kitchen temperature is not high, you can leave it overnight, and the surface will have a slightly crispy or hard texture, which is very pleasant.
