Ingredients for Mango Pudding: 240g mango puree, an appropriate amount of mango cubes, 240ml fresh milk, 10g gelatin sheets, 30g white sugar.
Method: Step 1: Prepare all ingredients. Reserve some mango cubes for decoration. Cut gelatin sheets into small pieces and soak them in cold water until soft; adjust the amount of sugar according to taste. Fresh milk can be used for a lighter taste, or replace part of it with animal cream for a richer flavor. Step 2: Blend the mango cubes in a large bowl to make mango puree. Step 3: In a small pot, combine milk and sugar and bring to a boil. Then turn off the heat. Step 4: After a minute, add the drained softened gelatin to the milk. Step 5: Stir until the gelatin is completely dissolved. Step 6: Pour the mango puree into the milk mixture. Step 7: Mix well, then strain the mixture for a smoother texture. If you prefer not to strain, this step can be skipped. Step 8: Clean the pudding bottles and pour the mango pudding mixture into them, leaving room for decoration with mango cubes. Step 9: Cover and refrigerate for at least 2 hours until the pudding is fully set. You can serve it directly or with additional mango cubes. Step 10: Mango pudding, a favorite dessert for women and children! Cooking Tips: 1. Adjust the ratio of mango puree to milk as needed. Soaking gelatin in cold water can help remove fishy taste. If cold water is not available, use water at the lowest possible temperature. Boil the milk with sugar until the sugar dissolves, then let it cool before adding gelatin. The ratio of gelatin to liquid is roughly 1:40, meaning one 5g gelatin sheet can be dissolved in 200g of liquid. 2. You can also replace mango with other fruits. If you don’t mind the extra effort, you can create a multicolored layered pudding by pouring new mango mixtures after each layer has set. Consume the pudding promptly after taking it out of the refrigerator to prevent it from softening due to heat, which can affect the texture.
