Ingredients for Tiramisu: Mascarpone cheese 250g, heavy cream 150g, water 50g, granulated sugar 70g, egg yolks 2, espresso coffee 40g, gelatin powder 8-10g, cocoa powder to taste, ladyfingers to taste.
Method: Step 1: Beat the egg yolks until pale. Step 2: Boil 50g of water and sugar in a small saucepan over low heat, slowly pour into the egg yolk mixture while continuously whisking to prevent curdling. Step 3: Set aside to cool as shown in the picture. Step 4: Stir mascarpone cheese until smooth. Step 5: Pour the egg yolk mixture into the mascarpone and blend until uniform using a manual whisk. Step 6: Heat gelatin powder in about 50g of water over a double boiler, stirring until well combined. Step 7: Whip cream until it reaches 5-6 minutes of development. Step 8: Combine the whipped cream and gelatin mixture into the mascarpone mixture and fold evenly. Step 9: The mixture should look like this. Step 10: Brew espresso coffee beforehand, quickly dip homemade ladyfingers in the coffee or brush with a layer. Line the bottom of the mold. Step 11: Pour a layer of cheese mixture. Step 12: The state should be as shown in the picture. Step 13: Lay another layer of ladyfingers. After filling, gently tap the mold and refrigerate in the fridge for 4-6 hours. Step 14: Use a hairdryer to warm the edges, place a cup underneath. Step 15: Gently remove the mold, and it should come off easily. Sprinkle a layer of cocoa powder on top.
