Ingredients for Black Forest Box Cake:
# Cherry Filling:
– Pitted cherry flesh 300g
– Water 100g
– Fresh lemon juice 20g
– Cornstarch 8g
– Water (for dissolving cornstarch) 20g
– Cherry juice 20g
– Rum 10g
# Cake Base:
– Milk 60g
– Sunflower seed oil 30g
– Cocoa powder 10g
– Salt 1g
– Cake flour 50g
– Eggs 4
– Granulated sugar 35g
– Lemon juice 2g
# Decoration:
– Chocolate beans 50g
– Whipped cream 500g
– Icing sugar 30g
– Fresh cherries several
Steps for making Black Forest Box Cake:
1. Prepare the cherry filling by halving and pitting the cherries;
2. Add water and fresh lemon juice, cook until the cherries are slightly soft and release their juice;
3. After cooking, remove 20g of cherry juice and mix it with rum, set aside;
4. Dissolve cornstarch in water, pour it back into the cherry mixture to thicken, then stop heating;
5. Let the cooked cherries cool;
6. Prepare chocolate crumbs by melting chocolate beans over water;
7. Spread a thin layer on parchment paper and freeze in the refrigerator;
8. Prepare the cake base by mixing sunflower seed oil, cocoa powder, and salt to an emulsified state;
9. Add milk and continue mixing evenly;
10. Sift in cake flour and mix evenly;
11. Separate eggs, add yolks to the batter and whites to a clean bowl;
12. Mix yolks with the batter until smooth, set aside;
13. Preheat the oven, add lemon juice and half of the sugar to the egg whites;
14. After a light pattern appears, add the remaining sugar and whip until a large hook shape is formed;
15. Fold a small amount of meringue into the batter with a spatula;
16. Pour the batter back into the meringue bowl and mix evenly with a J-shape motion;
17. Pour the batter into the mold from a height of 30cm, smooth the surface and gently release large bubbles;
18. Place in the middle of the oven, bake at 150°C top and 135°C bottom for 22 minutes, raise the top heat to 170°C for the last 4 minutes to set the skin;
19. Shake the cake out of the oven gently and let it cool to warm;
20. Use a cake box to imprint and cut into nine pieces;
21. Whip cream with icing sugar until stiff, directly fill into a piping bag for layers, and fill a small part with a piping tip for decoration;
22. Place a layer of cake at the bottom of the box, brush with cherry liquor;
23. Pipe a layer of cream;
24. Arrange a layer of cherry flesh;
25. Repeat the above steps until full;
26. Crush the chocolate;
27. Sprinkle on top, pipe cream flowers and decorate as desired.
