※ Cake Base: Lemon zest from 2 lemons, 60 grams of caster sugar (10 grams for marinating lemon zest), 1 gram of rose salt, 160 grams of crushed Oreos, 60 grams of butter, 6 egg yolks, 500 grams of whole milk, 12 grams of fresh lemon juice, 200 grams of heavy cream, 17.5 grams of gelatin sheets.


※ Decorations and Extras: 200 grams of heavy cream, 10 grams of caster sugar, fresh lemon slices.


Steps for making Lemon Baba Rouya Birthday Cake:


Step 1: Peel a thin layer of lemon zest and marinate it with rose salt and 10 grams of caster sugar for 30 minutes.


Step 2: Mix crushed Oreos with melted butter until evenly combined.


Step 3: Pour into a muslin-lined mold, roughly level it out, then compact it with a coffee bean hammer and freeze it for later use.


Step 4: Combine egg yolks with 50 grams of caster sugar until smooth.


Step 5: Soak gelatin sheets in water until soft.


Step 6: Add lemon zest and milk to a pot and cook over low heat, stirring until bubbles form.


Step 7: Remove the lemon zest.


Step 8: Squeeze in lemon juice and mix well.


Step 9: Slowly pour the lemon milk into the egg yolk mixture, stirring to create a custard.


Step 10: Pour back into the pot and cook over low heat, stirring until bubbles form, then remove from heat.


Step 11: Whip the heavy cream until it reaches 60-70% stiffness.


Step 12: Once the custard has cooled to about 60 degrees Celsius, add the softened gelatin and stir until completely dissolved.


Step 13: Mix in the whipped cream.


Step 14: Slowly pour the mixture into the mold, cover with plastic wrap, and refrigerate for at least 6 hours before decorating and serving.
