Ingredients for Traditional Early Cake: Egg whites 280g, Egg yolks 125g, Corn oil 90g, Pure milk 120ml, Salt 1g, Granulated sugar 90g, Cake flour 90g, Lemon juice 5g, Cornstarch 15g.
Method for Traditional Early Cake: Step 1 First, let’s prepare the mold. I used an 18×18×9 live bottom cake mold, lining it with baking paper and wrapping the sides and bottom with aluminum foil to prevent leakage. The foil should be wrapped in at least three layers, remember this, otherwise, the water leakage will affect the baking. Step 2 Separate the egg whites and yolks, and freeze the egg whites for later use.
I used eight eggs here, and it is crucial to follow the weight of egg whites and yolks in my recipe, as the size of eggs varies. Step 3 Take a piece of baking paper and sift the cake flour for later use. Step 4 Heat the corn oil to between 75-80 degrees, preferably measured with a thermometer. Step 5 In a clean bowl, place the corn oil and then pour in the sifted cake flour. Step 6 Stir evenly, the texture should be a quick flow when lifting the egg beater, if too thick, it indicates the oil temperature is too high.
Step 7 Add milk. Step 8 Stir evenly. Step 9 Add egg yolks. Step 10 Stir evenly. Step 11 Preheat the oven to 150 degrees for both top and bottom heat for 1 hour, and boil a pot of hot water. In a clean bowl without oil or water, add the frozen egg whites, lemon juice, and salt, and beat with an electric mixer at the highest speed until coarse bubbles form. Step 12 Add half of the sugar. Step 13 Continue to beat at high speed until the bubbles become fine.
Step 14 Add cornstarch and the remaining half of the sugar. Step 15 Beat at medium speed until the texture shown in the picture is reached, then stop. Step 16 Use a manual egg beater and stir for 30 seconds. Step 17 Smooth the meringue. Step 18 Add one-third of the meringue to the egg yolk mixture. Step 19 Fold evenly. Step 20 Pour back into the remaining meringue. Step 21 Fold evenly thoroughly. Step 22 Pour the mixture into the cake mold from about 20 cm high to remove some large bubbles, smooth the surface slightly, and then gently shake to remove more large bubbles.
Step 23 Pour the previously boiled hot water into the baking pan, add more, and place it in the lower or lowest layer of the oven. Adjust the baking time according to your oven’s conditions.
