Banana Date Oatmeal Cookies Recipe

Ingredients for Banana Date Oatmeal Cookies:
Oatmeal 90g, Banana Puree 100g, Dried Dates (chopped) 75g, Butter (softened) 125g, Brown Sugar 230g, Egg Yolk one, Cake Flour 225g, Baking Soda 3g, Lemon Zest (finely grated) one, Dried Dates (large pieces additional) 35g, Oatmeal (additional) 60g.

Instructions for making Banana Date Oatmeal Cookies:


Step 1: Prepare all the ingredients and preheat the oven to 180 degrees Celsius.


Step 2: In a bowl, mix softened butter, lemon zest, sugar, and egg yolk until well combined.


Step 3: The mixture should look like this after stirring.


Step 4: Incorporate banana puree, sifted flour, baking soda, 90g of oatmeal, and 75g of chopped dates, ensuring an even mix.


Step 5: Prepare a cookie sheet by spraying it with cooking oil and lining it with baking paper. Use a 15ml round measuring spoon to scoop the mixture and coat it in 60g of additional oatmeal. Place the coated mixture on the baking sheet, leaving a 2cm gap between each cookie. After arranging all the dough, press one to two large pieces of dried dates on top of each cookie. Bake for approximately 15 minutes.


Step 6: After baking, remove from the oven and let it cool on the baking sheet.
