Banana Oat Energy Bars Recipe

Ingredients for Banana Oat Energy Bars: 2 ripe bananas (peeled and 230g), 50g milk, 1 egg (60g with shell), any nuts (40g, can be increased), mixed oats, cornflakes, dried fruits, 280g, baking powder (optional) 3g, 50g cake flour.
Method for making Banana Oat Energy Bars:


Step 1: Combine wet ingredients – bananas, milk, and eggs serve as binders to hold various grains and dried fruits together. Choose ripe bananas for a sweeter and better texture.


Step 2: Dry ingredients – I’ve chosen mixed oats, which include oats, cornflakes, raisins, apple slices, and other mixed grains. For added texture, I’ve added my favorite almonds; you can add any nuts you prefer. I also added some baking powder, but found it unnecessary, so it can be omitted.


Step 3: Mash bananas with a fork.


Step 4: Add eggs and milk, and mix well.


Step 5: Combine dry ingredients.


Step 6: Mix them evenly with a whisk.


Step 7: Place wet and dry ingredients in a large bowl for easy mixing; I use my enamel pot for hot pot.


Step 8: Mix well with a spatula, ensuring a wet and sticky texture; the final product will also be slightly wet.


Step 9: Transfer all ingredients to a baking tray, lined with parchment paper, and shape into a neat square with a spatula and scraper. I use a common 28*28cm gold pan; you can imagine the size.


Step 10: Preheat the oven for 10 minutes at 180 degrees, then bake for 30 minutes, flipping once, using upper and lower heat, in the middle rack.


Step 11: After cooling, cut into strips. The mixture is compact, so you may need to apply some force when cutting.


Step 12: Take photos and style the presentation. I finally bought an internet-famous tablecloth, and the photos turned out great without the need for editing.


Step 13: Check the cross-section; it has moisture, with the sweetness of raisins and bananas just right. One bite, and you know it’s very healthy with a solid texture. It’s not recommended to drink a lot of water after eating, as it can be very filling, similar to compressed biscuits.
