Ingredients for Childlike Fun Cookies: Butter 40g, Icing Sugar 40g, Salt 1.5g, Whole Egg Liquid 20g, Cake Flour 100g, Baking Powder 1/2 teaspoon.
Method for making Childlike Fun Cookies:
Step 1: Soften the butter at room temperature. If you don’t want to wait, you can microwave it on high for 20 seconds. The advantage of using a glass mixing bowl is that it can be microwaved. Manually mix the softened butter with icing sugar and salt using an electric mixer while it’s turned off, then switch to low speed and mix until fully combined. Add the beaten egg liquid in portions, stirring until fully incorporated before adding the next portion. After adding all the egg liquid, whip until uniform and use a silicone spatula to gather any butter that has splashed onto the sides of the bowl for final whipping.
Step 2: Whip until completely uniform and free of oil-water separation, achieving a light, feathery texture.
Step 3: Sift the cake flour and baking powder into the whipped butter and egg mixture.
Step 4: Use a silicone spatula to repeatedly fold and press the dough together. Lift the bottom, flip the spatula to fold and press the dough down, and repeat this action until no dry flour is visible and the dough is uniform. This technique is also known as the folding method.
Step 5: I made two types of dough; the black one replaced 15% of the cake flour with cocoa powder. Cover with plastic wrap and let it rest for a while. If the dough is not absorbent, soft, and difficult to shape, wrap it in plastic wrap and refrigerate for a while. Unless the environment is too hot, this condition generally will not occur.
Step 6: Place heat-resistant baking mats such as silicone baking mats or parchment paper (do not use wax paper as it can easily tear) on a soft silicone mat for kneading dough, and then place the dough on top. Cover the surface with plastic wrap and roll out the dough to a thickness of about 3mm, ensuring even thickness.
Step 7: Remove the plastic wrap and press the IKEA fun cookie cutters firmly onto the rolled dough, leaving some space for expansion between the cookies.
Step 8: Carefully remove the excess dough around the cookie cutter shapes and transfer the entire baking mat into the baking tray, so as not to deform the cookies as you would when moving them. Preheat the oven to 180 degrees (top and bottom heat).
Step 9: Place in the middle layer of the oven and bake for about 10 minutes, depending on your oven, the thickness of the cookies, and the quantity. Pay attention to the color of the cookies, and they are ready when the color spreads from the edges to the center.
