Delicious Donut Recipe with Orange Flavor

Ingredients for Donuts:
– 140g room temperature eggs


– 55g granulated sugar


– 95g cake flour


– 38g orange juice


– 28g butter


– Orange zest (from 1 orange) + 3g granulated sugar for marinating


– Suitable amount of dark chocolate, dried cranberries, and coconut flakes.



Donut Making Steps:


1. Clean one orange with baking soda, then scrub with salt to ensure cleanliness. Use a zester to remove the orange zest and marinate it with 3-5g of sugar.


2. Cut the orange open and extract the juice.


3. Prepare the other ingredients.


4. Melt the butter over hot water until it becomes liquid, then mix it evenly with the orange juice. Keep it in warm water to prevent the butter from solidifying.


5. Add granulated sugar to the whole eggs and place them in warm water around 50 degrees Celsius to slightly raise the egg temperature. Whip with an electric mixer.


6. Whip at high speed. Once the eggs have a warm touch, you can remove them from the warm water and continue whipping until the egg mixture turns white, expands in volume, and the pattern does not easily disappear.


7. Add sifted cake flour.


8. Stir evenly with a spatula until the mixture is smooth and glossy.


9. Take a portion of the egg mixture and mix it into the butter liquid.


10. Continue by adding the orange zest and mix evenly.


11. Pour it back into the egg mixture.


12. Stir evenly.


13. Brush a thin layer of butter on the mold in advance, and pour the cake mixture into the donut mold, filling it about 9/10 full.


14. Place in a preheated oven at 160 degrees Celsius for 18 minutes (adjust according to your oven size).


15. After taking out, let it cool slightly, then use a toothpick to help release the donut from the mold.


16. Place on a cooling rack to cool completely. Meanwhile, prepare melted chocolate and chop dried cranberries.


17. Use a piping bag with a small opening, fill it with chocolate, and create basic line patterns, or simply pour chocolate and stick dried cranberries. Sprinkle with a layer of coconut flakes to finish.


18. Delicious and visually appealing donut cakes.

Cooking Tips for Donuts:


1. When peeling the orange, avoid the white part as it can be bitter. Marinate the orange zest with sugar in advance.


2. The butter and orange juice solution should be kept warm to maintain a liquid state.


3. When whipping eggs, the temperature should be around 40 degrees Celsius for better and more stable whipping.


4. Melt dark chocolate over warm water at around 50 degrees Celsius, avoiding high temperatures. You can freely decorate the donuts, such as drawing expressions or coating the entire bottom of the donut with chocolate, or brushing with sugar syrup and sprinkling coconut flakes.
